'Elvers' are young eels. It sounds revolting, but the accounts of the cake that I've read say it's delicious. So I'd like to see a recipe!

Yes I know it's boiled egg and mayonnaise but what other ingredients do people use. A colleague of mine makes delicious egg mayo sandwiches but she won't give me the recipe. A friend of mine adds cayenne pepper to hers.
